Layered Mexican Casserole
 

Brown 2 lbs of ground sirloin in a large skillet and drain grease. Drain water and mix two 15 ounce cans of fiesta corn, one 6 ounce can black olives and one 24 ounce jar of chunky salsa with the meat.

In a separate bowl mix a 16 ounce container of low fat cottage cheese and a 16 ounce container of fat free sour cream.

Spread less than half of the meat, corn and salsa mix in the bottom of a 9x12 baking pan. Spread the mix of cottage cheese and sour cream over the meat mixture. Spread 8 ounces of shredded cheddar cheese over the mixture. Spread the rest of the meat mixture on top.

(If you don't want to layer it, you can stir entire mixture together and place in a baking pan)

Bake at 300 degrees for 30 minutes.



Meat & Potatoe Bake
 

Brown 2 lbs of ground sirloin and drain.

Mix two 11 ounce cans of 98% fat free cream of mushroom soup, 8 ounces shredded cheddar cheese, and a bag of onion mix with the meat.

Sprinkle well with pepper and garlic powder.

Drain and mix in two 15 ounce cans of sliced white potatoes. (sliced carrots can be substituted or a can of each works well)

Press mixture in to a 9 x12 baking pan.

Bake at 300 degrees for 30 min.



Meat Loaf Three Ways
 

In a large bowl mix :

2 1/2 lbs of ground sirloin

1 can of tomato sauce (Hunts seasoned meatloaf sauce works well).

Mix in 1 bag of Meal Basics onion mix,

1 packet of meatloaf seasoning,

6 ounce box of Stove Top savory herbs stuffing mix.

Press mixture into a 9x12 baking pan, cover with aluminum foil and bake at 350 degrees for 55 min.

Before serving, cover 1/3 of meat loaf with ketchup, cover another 1/3 with Heinz 57 sauce, and the last 1/3 with your favorite Bar-b-que sauce



Mexican Skillet Bake
 

Place 2 lbs of ground sirloin in a skillet and sprinkle with taco seasoning mix. (Us wimps use mild)

Brown the ground sirloin and drain the grease.

Add 2 cans of tomato sauce, an 8 ounce bag of shredded cheddar cheese, a 16 ounce jar of thick and chunky salsa (mild ?), a 6 ounce can of broken and pitted black olives, a 14 ounce bag of frozen onion mix, and a 9 ounce bag of crushed Tostitos multigrain tortilla chips.

Mix well and place in a 9 x 12 Baking pan.

Bake at 300 degrees for 30 minutes.



Pork Bombay
 

Make 2 cups of brown long grain rice with 1 tablespoon of crushed red peppers in a pan. (follow package instructions)

Boil until rice is tender; drain excess water.

Mix in 2 lbs of fully cooked diced ham

Add two 10 ounce cans of 98% fat free cream of mushroom soup,

Add two 15 ounce cans of tomato sauce

Add 8 ounce container of diced onions

Cut 2 green peppers into bite size pieces and add to mix

Place mixture into a 9x12 baking pan and bake at 300 degrees for 30 minutes



Sausage Spinach Pasta Casserole
 

Brown 2 lbs of sausage, drain and set aside.

Boil 1 lb of farfel pasta until soft and drain.

Mix in a 32 ounce jar of pasta sauce,

13 ounce can of spinach,

1 packet of Italian herb seasoning,

8 ounce bag of Italian blend cheese.

Place mixture in a 9x12 baking pan and bake at 350 degrees for 30 minutes.
